Boerewors
Borewors is a traditional South African sausage that's popular at braais (BBQ, barbecues) and gatherings. It's made with a blend of ground meats and spices, and it's surprisingly easy to make at home. Here's a simple recipe for homemade boerewors:
Ingredients:
- 1 kg beef, preferably a mix of chuck and sirloin (you can also use venison, lamb, chicken or pork)
- 250 g pork fat (or lamb fat if using lamb)
- 2 tablespoons coriander seeds, toasted and crushed
- 2 tablespoons ground cumin
- 1 tablespoon paprika
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 teaspoon dried thyme
- 1 teaspoon ground allspice
- 1 teaspoon ground cloves
- 1/4 cup vinegar (white or apple cider vinegar)
- Sausage casings (hog casings or synthetic casings)
Instructions:
- Cut the beef and pork fat into small pieces that will fit into your meat grinder.
- In a large bowl, mix together the crushed coriander seeds, ground cumin, paprika, salt, black pepper, dried thyme, ground allspice, and ground cloves.
- Add the meat pieces and fat to the spice mixture, and toss everything together until the meat is coated evenly with the spices.
- Pass the seasoned meat and fat mixture through a meat grinder using the coarsest setting.
- Once ground, pass the mixture through the grinder again using the fine setting to ensure a smoother texture.
- Sprinkle the vinegar over the meat mixture and mix it in thoroughly. This helps to bind the flavors and gives the boerewors its characteristic tang.
- Rinse the sausage casings thoroughly in cold water.
- Using a sausage stuffer or a sausage-making attachment on a meat grinder, stuff the meat mixture into the sausage casings. Be careful not to overstuff to avoid bursting.
- Twist the boerewors into links at regular intervals to create individual sausages.
- Let the boerewors rest in the refrigerator for at least a few hours or overnight to allow the flavors to meld.
- When ready to cook, grill the boerewors over medium heat on a braai or barbecue for about 10-15 minutes, turning occasionally, until they are cooked through and browned.
- Serve the boerewors hot with your favorite sides, such as chakalaka, pap (maize porridge), or a fresh salad or as a Boerie Roll.
