Traditional Home made Boerewors


Boerewors

Borewors is a traditional South African sausage that's popular at braais (BBQ, barbecues) and gatherings. It's made with a blend of ground meats and spices, and it's surprisingly easy to make at home. Here's a simple recipe for homemade boerewors:





Ingredients:

  • 1 kg beef, preferably a mix of chuck and sirloin (you can also use venison, lamb, chicken or pork)
  • 250 g pork fat (or lamb fat if using lamb)
  • 2 tablespoons coriander seeds, toasted and crushed
  • 2 tablespoons ground cumin
  • 1 tablespoon paprika
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cloves
  • 1/4 cup vinegar (white or apple cider vinegar)
  • Sausage casings (hog casings or synthetic casings)

Instructions:

  1. Cut the beef and pork fat into small pieces that will fit into your meat grinder.
  2. In a large bowl, mix together the crushed coriander seeds, ground cumin, paprika, salt, black pepper, dried thyme, ground allspice, and ground cloves.
  3. Add the meat pieces and fat to the spice mixture, and toss everything together until the meat is coated evenly with the spices.
  4. Pass the seasoned meat and fat mixture through a meat grinder using the coarsest setting.
  5. Once ground, pass the mixture through the grinder again using the fine setting to ensure a smoother texture.
  6. Sprinkle the vinegar over the meat mixture and mix it in thoroughly. This helps to bind the flavors and gives the boerewors its characteristic tang.
  7. Rinse the sausage casings thoroughly in cold water.
  8. Using a sausage stuffer or a sausage-making attachment on a meat grinder, stuff the meat mixture into the sausage casings. Be careful not to overstuff to avoid bursting.
  9. Twist the boerewors into links at regular intervals to create individual sausages.
  10. Let the boerewors rest in the refrigerator for at least a few hours or overnight to allow the flavors to meld.
  11. When ready to cook, grill the boerewors over medium heat on a braai or barbecue for about 10-15 minutes, turning occasionally, until they are cooked through and browned.
  12. Serve the boerewors hot with your favorite sides, such as chakalaka, pap (maize porridge), or a fresh salad or as a Boerie Roll.
