Ingredients:
Vanilla Ice Cream:
- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
Caramel Swirl:
- 360g tin Caramel
Chocolate Coconut Biscuits:
- 1 cup all-purpose flour
- 1/4 cup cocoa powder
- 1/2 cup desiccated coconut
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 1/2 teaspoon vanilla extract
- A pinch of salt
Assembly:
- Peppermint Aero or Peppermint Crisp chocolate, chopped
Instructions:
Vanilla Ice Cream:
- In a mixing bowl, whisk together heavy cream, whole milk, granulated sugar, and vanilla extract until the sugar is dissolved.
- Pour the mixture into an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
- Transfer the churned ice cream into a rectangular tin (about 20cm x 30cm), spreading it roughly to create an even layer. Leave gaps for the caramel swirl.
Caramel Swirl:
- Give the Caramel Treat a good stir until it's smooth.
- Dollop spoonfuls of the Caramel Treat over the ice cream layer.
- Use a knife or spatula to swirl the ice cream and caramel together to create a marbled effect.
- Smooth the top and freeze the tin for 3-4 hours or until the ice cream is firm.
Chocolate Coconut Biscuits:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, combine flour, cocoa powder, desiccated coconut, granulated sugar, softened butter, vanilla extract, and a pinch of salt. Mix until a dough forms.
- Roll out the dough on a floured surface and cut into square or rectangular shapes.
- Place the biscuits on the prepared baking sheet and bake for about 12-15 minutes, or until they're firm to the touch. Let them cool completely.
Assembly:
- Chop the Peppermint Aero or Peppermint Crisp chocolate into small pieces.
- Using a biscuit as a guide, cut squares of the ice cream mixture and sandwich them between two chocolate coconut biscuits.
- Roll the sides of the ice cream sandwiches in the chopped Peppermint Aero or Peppermint Crisp chocolate, coating the edges.
- Place the assembled ice cream sandwiches on a baking sheet lined with parchment paper and freeze in an airtight container until they're ready to be served.
